Nizoro ✦ Born of the Deccan
Dum Hasa Dynasty.
Slow-sealed biryani and fire-kissed signatures from a new Deccan kitchen — built in Rau, delivered steaming.
The Art of Dum
Patience, layer by layer.
Dum is not a mystery, and we will not pretend it is one. It is a discipline: each element prepared on its own terms, layered in strict order, then sealed so that steam — not shortcuts — finishes the work.
- 01
Rice
Aged basmati, cooked a breath short of done — it finishes in the steam.
- 02
Aromatics
Saffron, kewra and warm whole spice, ready to rise through every layer.
- 03
Marination
Meat rested long in yoghurt and ground spice, tender before it ever meets heat.
- 04
Fried onion
Birista, caramelised to deep bronze — sweetness at the very edge of smoke.
- 05
Herbs
Mint and coriander, torn fresh and scattered like a green hush.
- 06
Dum
The pot sealed tight, the flame lowered, the waiting allowed to work.
Dum ✦ The Signatures
Sealed Slow. Opened Steaming.

Signature ✦ House Dum
The Zafrani Chicken Dum
The house signature. Marinated chicken layered under saffron-streaked basmati with birista and fresh herbs, then sealed and finished over a low, patient flame. The lid comes off at your table — aroma first, everything else after.

Bold
Deccan Fry-Piece Biryani
A Deccan favourite done properly: chicken fried until the edges crackle, then layered into masala-rich basmati and finished under dum. Crunch giving way to steam-softened spice, with birista sweetness running through every spoonful.

Signature ✦ House Dum
Resham Mutton Dum
Mutton given the time it demands — marinated deep, layered under long-grain basmati, saffron and herbs, then sealed on dum until the meat loosens from the bone and the rice carries its richness.
On the menu →Fire ✦ Five Signatures, One Standard
The Five
Five starter experiences that carry the NIZORO standard — chosen, not accumulated. Everything else on the menu answers to these.

01 — Chicken
Chakna-Makhna
Boneless chicken bites tossed glossy in butter and house masala, built for sharing. Choose your temperature — Mehfil for gentle warmth, Jashn for a proper celebration, Junoon when you want the burn to linger.
Spice level 2 of 3Mehfil · Jashn · Junoon
02 — Chicken
Ember-Roasted Tandoori Chicken
Chicken rested in yoghurt and ground spice, then roasted over fierce heat until the skin blisters and chars. Available whole or half. Smoky at the surface, tender at the bone — no shortcuts in between.
Spice level 2 of 3Mehfil · Jashn · Junoon
03 — Chicken
Hand-Fired Chicken Seekh
Minced chicken worked by hand with green chilli, fresh herbs and warm spice, pressed onto skewers and fired over open flame. Charred outside, juicy through the centre — best eaten too hot to be sensible.
Spice level 2 of 3Mehfil · Jashn · Junoon
04 — Fish
Masala Charred Fish
One of The Five. Fish pressed with a coarse house masala and charred until the crust darkens and grips. Smoky, peppery, a little defiant — while the flesh underneath stays soft and steaming.
Spice level 3 of 3
05 — Mutton
Pepper Mutton Bites
Tender mutton bites seared hot with cracked black pepper, curry leaf and a dry, clinging masala. Bold and direct — heat that builds rather than shouts. Finishing kitchen trials now; arriving soon.

Zafran Gulab, Deccan Payasam, Amber Apricot — three unhurried ways to close the box.
The Sweet Finale →Our Story
Some flavours cannot be rushed. In an age of shortcuts, we chose the long way.
NIZORO is a new kitchen, and we say so plainly. No invented lineage, no borrowed palace — what we inherit is a method: the Deccan’s patience with fire, its instinct for layering, its refusal to hurry a good thing.
Born of the Deccan. Built for now.
